Mornings at Peace With-Inn are a
very special time. Awaken to the aromas of fresh ground and
brewed coffee, freshly baked breads and other samplings made

England-style breakfast each morning. Our kitchen takes full
advantage of fresh locally grown foods. Fresh eggs, maple syrup,
fruits, berries, and vegetables are all locally abundant. Please

"Summer Brunch Eggs"
Ingredients:
-
8 Eggs
-
2 1/3 c. milk
-
1 T, Dijon mustard
-
3T, melted butter
-
2 ½ T, flour
-
2 ½ c. grated cheddar cheese
-
2 ½ c. fresh asparagus
-
(par boiled 2 min. in boiling salted water)
-
2 c. ham, cubed
-
2 c. mushrooms, sliced
-
9 c. cubed French bread (crusts removed)
-
Combine the above wet ingredients
-
Whisk in flour
-
Add the asparagus, ham, and mushrooms
-
Place bread cubes in a greased 9"x13" baking pan
-
Pour the egg mixture over the bread
-
Cover with plastic wrap and let sit in refrigerator
overnight
-
Bake 1 hour in preheated oven at 350 degrees
-
Cover with grated cheddar cheese during the final 20 minutes
of baking
Let cool slightly, cut, and serve. Bon

"Wild Maine Blueberry French Toast"
-
1 long loaf French bread
-
3 eggs
-
1 tablespoon sugar
-
1 teaspoon real vanilla extract
-
1 2/3 cups milk
-
¼ cup flour
-
6 tablespoons brown sugar
-
1.2 teaspoon cinnamon
-
½ stick cold butter
-
3 oz. package cream cheese
-
2 cups wild Maine blueberries
-
Liberally butter a 13"x9" inch baking dish
-
Cut bread into 1 inch thick diagonal slices and place in
baking dish
-
In a medium bowl, lightly beat eggs
-
Add sugar, and vanilla
-
Stir in milk until well blended
-
Pour mixture over bread, turning slices to coat well
-
Cover with foil or plastic wrap and refrigerate overnight
-
Combine flour, brown sugar, cinnamon, and cold butter (cut
into chunks) in a food processor until mixture resembles
course crumbs

The next day, turn bread slices over in baking dish
-
Cut cream cheese into small chunks and scatter on top of
bread
-
Sprinkle brown sugar mixture over bread with cream cheese
-
Liberally scatter blueberries on top
-
Bake in a preheated oven 350 degrees for 45 minutes
This recipe can be prepared up to 2 days ahead.
Looks and tastes delicious!
Best served with thick sliced bacon or maple cured sausage links
